Hi friends!! It’s been so long since I’ve been active on here. A vacation combined with a cold, and some time spent focusing on family has led me to a decrease in writing. Never too late to start again! Today I want to share another easy recipe.
This recipe is adopted from a Skinny Taste cookbook (link here). This is one of my favorite cookbooks we own and all the recipes are healthy and delicious!
The recipe made plenty of food, and we’ve been munching on the leftovers. All you need is some rice (we cooked a double serving using basmati rice), cilantro, avocado, egg, and tomato! Scott also grilled up a pork tenderloin so we had more protein.
Chop up that cilantro & cook the rice according to the package. We used basmati rice and made a double serving. 2 handfuls of cilantro was plenty. Mix the cilantro with the rice when it’s finished cooking. Slice those avocados and tomato, and set aside.
Cook your egg over easy. We have a single-egg pan that makes this very easy. If you don’t know how, follow this simple YouTube video for instructions.
All that’s left is to garnish! Salt and pepper adds a little flavor, combine everything in a low-rimmed bowl. We served ours with pork, but this would be an excellent vegetarian option as well.
